lemon cake

Ingredients:

  • 300g flour
  • 250ml milk (can be substituted with plant milk)
  • 200g sugar
  • 125g butter
  • 1 sachet baking powder
  • 1 sachet vanilla sugar
  • 2 lemons worth of juice
  • For the icing:
  • 1 lemon of lemon juice
  • icing sugar

Instructions:

  1. Preheat the oven to 180°C top/bottom heat.
  2. Place all the ingredients in a mixing bowl and mix well until the batter is creamy. The batter is quite runny.
  3. Place baking paper on a baking tray and pour the batter onto it
  4. Bake the cake at 180°C for approx. 20 minutes. Test with a toothpick. If no more batter sticks to the toothpick, the cake is ready to be taken out.
  5. For the icing, squeeze a lemon and add in icing sugar until its thick like icing. Brush the cooled cake with it.
