Ingredients:

  • 150mL lemon juice (about 5 lemons)
  • zest of 1 lemon
  • 3 eggs
  • 150g sugar
  • 75g butter softened butter in pieces
  • 1tbsp cornflour or potato starch

Instructions:

  1. Bring to a boil the lemon juice and zest
  2. Separately beat the eggs, sugar, and cornflour/potato starch together until well combined
  3. Take lemon juice off the stove and slowly drizzle egg mixture in whisking constantly
  4. Put mixture back on medium/low heat and whisk constantly until mixture thickens
  5. Take off fire and add butter bit by bit while whisking vigorously to incorporate butter to mixture (you can use melted butter instead and drizzle it slowly to combine)
  6. Done! Preserve curd in a jar to use as a spread or fill your pie/tart. The curd will set in 5-10mn
