custart tart/flan pâtissier recipe

im still polishing the recipe so it could be better


Ingredients:

  • 1 pâte brisée
  • 175g sugar
  • 4 eggs
  • 2 egg yolks
  • 800ml milk
  • 200ml cream
  • 90g cornstarch
  • around 1tsp vanilla extract, can be replaced with vanilla sugar

Instructions:

  1. boil the milk and cream with the vanilla
  2. while its heating up mix the sugar and cornstarch
  3. add in the eggs and yolks and whisk
  4. add in the hot milk while still whisking
  5. then put it back in the pan and cook on low heat while still whisking for around 5 minutes until it gets a nice creamy thick consistency
  6. pour the cream in the dough and bake it at 180°c for 40 minutes
